Aloo Tama

A sour and spicy Nepali curry made with bamboo shoots (tama) and potato.

Ingredients

  • 1400g fermented bamboo shoots (tama), drained
  • 23 medium potatoes, cubed
  • 31 can black-eyed peas (optional)
  • 41 onion, chopped
  • 52 tomatoes, chopped
  • 62 garlic cloves
  • 71 tsp turmeric
  • 81 tsp cumin
  • 91 tbsp mustard oil
  • 10Salt and fresh coriander

Method

    Rinse bamboo shoots thoroughly.

    Heat oil, add cumin seeds, then onion. Fry until soft.

  3. 3

    Add garlic and tomatoes. Cook until mushy.

    Add turmeric, salt and potatoes.

  5. 5

    Add bamboo shoots. Mix thoroughly.

    Add ½ cup water. Cover and cook 20 min.

  7. 7

    Garnish with coriander. Serve with rice.
