Aloo Tama

EasyA sour and spicy Nepali curry made with bamboo shoots (tama) and potato.

Ingredients
- 1400g fermented bamboo shoots (tama), drained
- 23 medium potatoes, cubed
- 31 can black-eyed peas (optional)
- 41 onion, chopped
- 52 tomatoes, chopped
- 62 garlic cloves
- 71 tsp turmeric
- 81 tsp cumin
- 91 tbsp mustard oil
- 10Salt and fresh coriander
Method
- 1
Rinse bamboo shoots thoroughly.

Heat oil, add cumin seeds, then onion. Fry until soft.

Add garlic and tomatoes. Cook until mushy.

Add turmeric, salt and potatoes.

Add bamboo shoots. Mix thoroughly.

Add ½ cup water. Cover and cook 20 min.

Garnish with coriander. Serve with rice.
