Nepal's national dish — lentil soup, steamed rice and seasonal vegetables. Simple, nutritious and eaten twice a day by most Nepalis.

Ingredients

  • 12 cups red lentils (masoor dal)
  • 22 cups basmati rice
  • 32 tbsp ghee
  • 41 tsp turmeric
  • 51 tsp cumin seeds
  • 62 garlic cloves, minced
  • 71 tsp ginger, grated
  • 8Salt to taste
  • 9Fresh coriander
  • 10Seasonal vegetables (spinach, potato, cauliflower)

Method

  1. 1

    Wash lentils and rice separately until water runs clear.

  2. 2

    Boil lentils with turmeric and salt until soft (20–25 min).

  3. 3

    In a pan, heat ghee. Add cumin seeds, garlic and ginger. Fry 1 min.

    Pour the tempered oil (tarka) into the cooked lentils. Stir.

  5. 5

    Cook rice in separate pot with 1:2 ratio water. Steam until fluffy.

    Stir-fry vegetables with salt, cumin and turmeric until tender.

  7. 7

    Serve dal over rice with vegetables on the side.
