Sel Roti

MediumTraditional Nepali ring-shaped rice bread, crispy outside and fluffy inside. A festive staple made during Dashain and Tihar.

Ingredients
- 13 cups rice flour
- 21 cup sugar
- 31 cup warm water
- 4½ cup milk
- 52 tbsp ghee
- 6½ tsp cardamom powder
- 71 tsp baking powder
- 8Oil for deep frying
Method
- 1
Mix rice flour, sugar, cardamom and baking powder.

Add ghee, milk and warm water gradually. Mix to a smooth batter.

Rest the batter 20 min.

Heat oil in a deep pan (180°C).

Pour batter in a circular ring directly into oil.

Fry until golden and crispy (3–4 min each side).

Drain on paper towels. Serve warm.
