Thukpa Noodle Soup

EasyHearty Tibetan-Nepali noodle soup from the Himalayan highlands — perfect for cold weather.

Ingredients
- 1200g flat wheat noodles
- 21 litre vegetable or chicken stock
- 32 garlic cloves, minced
- 41 tbsp ginger, grated
- 51 onion, sliced
- 61 carrot, julienned
- 71 courgette, sliced
- 8100g spinach
- 92 tbsp soy sauce
- 101 tsp sesame oil
- 11Chilli flakes
- 12Fresh coriander and spring onion to serve
Method

Boil noodles until al dente. Drain and set aside.

In a large pot, sauté onion in oil. Add garlic and ginger.

Add stock, soy sauce and bring to boil.

Add carrot and courgette. Simmer 10 min.

Add spinach and cooked noodles.

Season with sesame oil, salt and chilli.

Serve in bowls topped with fresh coriander and spring onion.
